Hi! We would like to start on Cloud, but we may need to run opendesk on our own servers next year. Is that possible, and do we keep our tickets?

Yes. Cloud and self-hosted are the same code, and everything is available through the REST API, so you can move whenever you are ready. The self-hosting guide walks through it, and we are happy to help.
